Tasting notes
Aromas of lemon curd, flavors of golden apple, apricot and butter cookies with a soft, tart acidity and a hint of blood orange on the finish.
This is our go-to turkey pairing wine! This wine would also be a perfect compliment to fresh wild Salmon. Its balanced composition lends it freely to pairing, so follow your cravings and experiement!
Production notes
The berries were loaded whole cluster and lightly pressed and made in our desired style of a Cote-De-Beaune wine. We use lightly toasted Burgundy wine barrels with one-third new oak.
Other notes
The Vintage:
2020 was a warm and dry vintage with some slight rain in mid-September just prior to harvest. The clusters had big and small berries (hens and chicks!) which lead to richer and more intense flavor. The growing season was extended by reduced sun, and these grapes were harvested right at the close of September.
